In Episode 9, Kristina and Sarah get to interview a phenomenal human being: Jill Cockson, majority owner of Swordfish Tom’s, a speakeasy in Kansas City.
Jill has over 20 years of experience in the hospitality industry, and this is not the first bar of which she has been the proprietor. Her concept at Swordfish Tom’s is so unique, yet has broken down pre-conceived notions about what a bar or craft cocktail establishment can be.
We’ll discuss some trends in the drink industry that have shaped how she has selected ingredients and spirits to carry, as well as how, as a woman entrepreneur, she has applied her unique perspective to her business model, in a male dominated industry.
